Romaine, Carrot & Cherry Tomato Salad w/ Lemon-herb Yogurt Dressing

Eat it and reap! Reap the benefits of a yogurt salad dressing that is versatile, healthy, delicious and a terrific alternative to traditional high-fat dressings.

Ingredients

  • 4 cups romaine lettuce, washed and torn into bite-size pieces
  • 2 medium carrots, grated (if you prefer they can be julienned)
  • 12 cherry tomatoes, quartered

Lemon-herb Yogurt Dressing

  • Zest of one lemon
  • 1 tbsp fresh lemon juice
  • 1-2 tbsp red wine vinegar
  • 1/2 tsp dried basil
  • 1/4 tsp dried oregano
  • Sea salt to taste
  • Fresh cracked pepper to taste
  • 1 cup yogurt (Look for the words "active culture" or "live culture" on the label, also called probiotics)

Method

Put romaine, carrot and tomato on four salad plates.
In a small bowl, beat together yogurt, lemon juice, lemon zest, red wine vinegar, basil, oregano, sea salt and fresh black pepper until smooth.  Drizzle the dressing over the salad ingredients.

For variation or a more complex dressing add:

  • 1 tbsp fresh chopped dill or chives
  • 1 tbsp Dijon mustard
  • 1/2 tbsp chopped fresh parsley
