Snow Pea Stir-fry w/ Red Onion & Sweet Peppers

A truly complimenting vegetable dish to the Lamb ribs in this episode. Simple and tasty enough to be able to serve as a vegetable dish for other meals too.

Ingredients

  • 1 tbsp canola oil
  • 2 sweet red peppers, sliced into strips
  • 1 whole red onion, sliced
  • 1 lb snow peas
  • Sea salt & cracked black pepper to taste

Method

Heat a skillet to medium-high, add oil, onion and stir-fry for 2 minutes.  Add sweet pepper, and cook for 3 - 4 minutes, stir in the snow peas, sea salt & cracked black pepper to taste and stir-fry for 1 more minute.

This simple Snow Pea Stir Fry is served on the same plate as the Lamb Ribs w/Schezwan Peanut Sauce & Grilled Pineapple served over Rice Noodles.

If you are serving it alone, add the following to the stir-fry: 1 tbsp soy sauce 1 tsp toasted sesame seeds

Nutrition Bites

Awesome, stellar vegetable stir-fry. This meal highlights   having a variety of delicious, colorful vegetables and fruit   and provides more than three servings on your plate.
